How to Make Cheesy Chicken Cauliflower Casserole in a Slow Cooker

As my family has shifted to more low carb meals, I have been trying all kinds of things in the kitchen and this is a recipe I have made a few times that is absolutely LOVED by all.

My family very much loves riced cauliflower as a substitution for rice. It doesn’t have that “cauliflowery” taste and it helps give the same body to dishes as rice does. SO, I decided to give a chicken casserole a try and after trying a few things, I landed on this yummy dish that is now a regular around here!

Ingredients forCrock Pot Cheesy Chicken Cauliflower Casserole (Low Carb)

  • 4 Cups Riced Cauliflower (or finely chopped cauliflower)
  • 4 Cups Boneless Skinless Chicken Thighs- cooked and cut into bite sized pieces
  • 2 Cups Shredded Extra Sharp Cheddar Cheese
  • 1 Cup Sour Cream
  • 8 oz Cream Cheese- Softened
  • 1.5 teaspoon Poultry Seasoning
  • 2 Eggs – Beaten
  • Salt and Pepper to Taste

Notes onCrock Pot Cheesy Chicken Cauliflower Casserole

  • We find riced cauliflower in the freezer section at the grocery store. If you would like to make your own you can just finely chop it with a knife or run through a food processor.
  • We cook up our chicken ahead of time by grilling it or cooking it in a skillet with some seasoned salt and butter.
  • We LOVE using our casserole crock for this recipe because it makes dividing portions so much easier. However, this recipe cooks up great in a regular 6 quart slow cooker too.

Instructions

  • In a mixer, combine sour cream, cream cheese, eggs and poultry seasoning until well mixed.

  • Remove bowl from mixer and stir in chicken and cauliflower, seasoning with salt and pepper.

  • Pour mixture into a casserole crock OR 6 quart slow cooker.

  • Top with shredded cheese.

  • Cook on high for 2-3 hours until casserole heats through and cheese fully melts.

      Hi Shelly-
      We toss it in raw. Usually we use the frozen bags and just let them set out a few minutes and toss them in. But I have made it with fresh riced cauliflower too. It turns out great either way. Enjoy!

      I know that is probably not the answer you were hoping for, but after a lot of consideration we have decided to not include it at this time.

      Hi Natalie-

      I haven’t tried it, but if you cut up the chicken (and season it well with salt and pepper), I would bet it would be done in around approximately 4 hrs (timing may vary) and should still turn out fine. Let me know if you try it. Enjoy!!
